Refinishing the Saloon and Cockpit Tables

Hello, all.

We own the H49 Vita Nova (formerly Hylite), hull #58. We are looking to refinish the saloon and cockpit tables. Any recommendations on what material to use on each? The saloon is an interior application with little environmental exposure while the cockpit has a lot of environmental exposure.
